🔧 Instructions

1. Preheat & Prep

  • Preheat oven to 375°F (190°C).
  • Grease a 9×9-inch or medium casserole dish.

2. Mix the dry ingredients

In a bowl, whisk together:

  • Cornmeal
  • Flour
  • Baking powder
  • Salt
  • Sugar (if using)

3. Combine the wet ingredients

In another bowl, whisk:

  • Eggs
  • Buttermilk
  • Melted butter

Then stir in:

  • Grated zucchini
  • Corn
  • Onion

4. Bring it all together
