📋 Ingredients (Serves 4–6)

Base

  • 6 cups chopped lettuce (romaine or iceberg)
  • 1–2 cups cherry tomatoes, halved
  • 1 cup black beans (rinsed + drained)
  • 1 cup corn (fresh, canned, or frozen thawed)
  • 1/2 cup red onion, diced
  • 1–2 avocados, diced
  • 1 cup shredded cheddar or Mexican blend cheese

Protein (pick one)

  • 1 lb ground beef
  • OR 1 lb ground turkey/chicken
  • OR seasoned grilled chicken strips
  • OR keep it vegetarian → add extra beans

Taco Seasoning

(Or 1 packet store-bought)

  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp oregano
  • 1/4–1/2 tsp salt
  • Black pepper to taste

Crunchy Toppers

  • Crushed tortilla chips or Doritos (classic taco salad!)
  • Or toasted tortilla strips

Dressing Options

Choose one:
1. Creamy Salsa Ranch

  • 1/2 cup ranch
  • 1/3 cup salsa
  • Squeeze of lime

2. Cilantro-Lime Dressing

  • 1/2 cup Greek yogurt
  • 1 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tbsp chopped cilantro
  • Salt + pepper

3. Chipotle Mayo-Lime

  • 1/4 cup mayo
  • 1/4 cup Greek yogurt
  • 1 chipotle in adobo (finely minced)
  • Lime juice

🔥 Instructions

1. Cook the meat

  • Brown beef (or turkey/chicken) in a skillet.
  • Drain if needed.
  • Add taco seasoning + 1/4 cup water.
  • Simmer 3–4 minutes until thickened.

Let cool slightly.


2. Build the salad

In a big bowl or individual bowls, layer:

  • Lettuce
  • Tomatoes
  • Beans
  • Corn
  • Onion
  • Avocado
  • Cheese
  • Taco meat

3. Add crunch

Top with crushed tortilla chips right before serving.


4. Drizzle with dressing

Use any of the suggested dressings.
Toss lightly or leave drizzled on top.
