Ingredients

For the Salmon

  • 4 salmon fillets (6 oz each)

  • 2 cloves garlic, minced
  • 2 tablespoons grated Parmesan cheese

Instructions

Step 1: Prepare the Rice

  1. In a medium pot, heat butter or olive oil over medium heat.
  2. Add rice and toast for 1–2 minutes.
  3. Pour in broth and add salt. Bring to a boil.
  4. Reduce heat to low, cover, and simmer 15–18 minutes, until rice is tender.

Step 2: Make the Salmon Filling

Step 3: Cook the Salmon

  1. Heat olive oil in an oven-safe skillet over medium-high heat.
  2. Sear salmon fillets 2–3 minutes per side until golden.
  3. Transfer skillet to oven and bake for 8–10 minutes, or until salmon is cooked through and filling is heated.

Step 4: Grill the Asparagus

  1. Toss asparagus with olive oil, salt, and pepper.
  2. Heat a grill pan over medium-high heat.
  3. Grill asparagus 3–5 minutes, turning occasionally until tender and slightly charred.

Step 5: Serve

  1. Plate a portion of rice.
  2. Place stuffed salmon on top.
  3. Arrange grilled asparagus alongside.
  4. Serve with lemon wedges.

  • For extra flavor, drizzle salmon with a light lemon-butter sauce.
  • Spinach can be substituted with kale or Swiss chard.
  • Breadcrumbs can be panko for a crunchier texture.
