Here’s a classic, fresh, and absolutely delicious Strawberry Shortcake recipe — soft biscuits, sweet strawberries, and fluffy whipped cream. A perfect dessert for spring, summer, or anytime you’re craving something light and dreamy!


🍓 Classic Strawberry Shortcake

⭐ Ingredients (serves 6)

For the Strawberries

  • 1 lb fresh strawberries, sliced
  • ¼–½ cup sugar (to taste)
  • 1 tsp lemon juice (optional, brightens flavor)

For the Biscuits

  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup cold unsalted butter, cubed
  • ⅔ cup milk or heavy cream
  • 1 tsp vanilla extract (optional)

For the Whipped Cream

  • 1 cup heavy whipping cream
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract

🔧 Instructions

1. Prepare the strawberries

  1. Mix sliced strawberries with sugar and lemon juice.
  2. Let them sit for 15–30 minutes to release juices (makes the syrupy goodness).

2. Make the biscuits

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add cold butter and cut it in using a pastry cutter or your fingers until it forms pea-sized crumbs.
  4. Pour in milk/cream and vanilla; stir until dough just comes together.
  5. Turn onto a floured surface and gently pat to 1-inch thickness.
  6. Cut into rounds using a biscuit cutter or glass.
  7. Place on a baking sheet and bake 12–15 minutes, until golden.

3. Make the whipped cream

  1. Whip cold heavy cream with powdered sugar and vanilla until soft-to-medium peaks form.

4. Assemble the shortcakes

  1. Split warm biscuits in half.
  2. Spoon strawberries (with lots of juice) over the bottom half.
  3. Add a generous dollop of whipped cream.
  4. Place the top half on and add more berries + cream if desired.

💡 Tips

  • For extra richness, brush biscuit tops with cream and sprinkle with sugar before baking.
  • Add a splash of balsamic vinegar to the strawberries for a gourmet twist.
  • Want it easier? Use store-bought pound cake or angel food cake instead of biscuits.
  • Make it ahead: biscuits freeze well and can be reheated quickly.
