Here’s a bold, crunchy, flavor-packed recipe for Spicy Garlic Dill Pickles—perfect if you love heat, garlic, and that classic dill punch. Make them as refrigerator pickles (ready in 24 hours) or process for canning.


🥒 Spicy Garlic Dill Pickles

⭐ Ingredients (for 2 quart jars)

Pickles

  • 6–8 small cucumbers (Kirby/pickling cucumbers), sliced or whole
  • 6–8 garlic cloves, smashed
  • 4–6 fresh dill sprigs
  • 2–4 hot peppers (jalapeño, serrano, or red chiles), sliced
  • 2 tsp mustard seeds
  • 2 tsp whole black peppercorns
  • 2 tsp crushed red pepper flakes (adjust for heat)

Brine

  • 2 cups water
  • 2 cups white vinegar
  • 3 tbsp kosher or pickling salt
  • 1 tbsp sugar (optional but balances flavor)

🥣 Instructions

1️⃣ Prep Jars & Veggies

  • Wash jars well (sterilize if canning).
  • Rinse cucumbers and trim ends (helps prevent soft pickles).

2️⃣ Pack the Jars

Into each jar, add:

  • 2–3 garlic cloves
  • 2–3 dill sprigs
  • 1 sliced chili pepper
  • 1 tsp mustard seeds
  • 1 tsp peppercorns
  • 1 tsp red pepper flakes
    Then pack cucumbers tightly inside.

3️⃣ Make the Brine

  1. In a saucepan, combine water, vinegar, salt, and sugar.
  2. Bring to a boil, stirring until salt dissolves.
  3. Remove from heat.

4️⃣ Pour Brine

  • Carefully pour the hot brine into the jars, fully covering cucumbers.
  • Tap jars gently to remove air bubbles.
  • Seal with lids.

5️⃣ Chill or Can

Refrigerator Pickles:

  • Cool, then refrigerate.
  • Best flavor after 24–48 hours, keeps up to 2 months.

Canning (Optional):

  • Process sealed jars in boiling water for 10 minutes.
  • Cool and store up to 1 year.

🔥 Tips & Variations

Extra Spicy

Add:

  • 1 more sliced chili
  • ½ tsp cayenne in the brine
  • Fresh sliced habanero (⚠️ extremely hot)

Crunch Boost

Add 1–2 grape leaves per jar or ¼ tsp calcium chloride (Pickle Crisp).

Garlic Lovers Version

Up to 6 cloves per jar—your kitchen will smell AMAZING.

Dilly-Dilly

Add more dill sprigs and ½ tsp dried dill seed.
