🥔 SOUTHERN POTATO SALAD (Traditional Recipe)

Ingredients

  • 3 lbs russet or Yukon Gold potatoes (about 6–7 medium potatoes)
  • 4–5 hard-boiled eggs, chopped
  • 1 cup mayonnaise
  • 2–3 tbsp yellow mustard
  • ¼ cup sweet relish (or chopped sweet pickles)
  • 1 small onion, finely diced (white or yellow)
  • 1–2 celery stalks, finely diced
  • 1–2 tbsp pickle juice or vinegar (optional but recommended)
  • 1–2 tsp sugar (optional—gives the classic Southern touch)
  • Salt and pepper to taste
  • Paprika for garnish
  • Optional add-ins: chopped pimentos, diced bell pepper, dill, green onions

Instructions

1. Cook the potatoes

  • Peel (optional) and cut potatoes into 1-inch chunks.
  • Add to a pot of salted water.
  • Bring to a boil and cook 10–15 minutes, until tender but not falling apart.
  • Drain and let cool slightly.

2. Prepare the dressing

In a bowl, mix together:

  • Mayonnaise
  • Mustard
  • Sweet relish
  • Sugar (if using)
  • Pickle juice or vinegar
  • Salt and pepper

Taste and adjust—Southern potato salad should be creamy, tangy, a little sweet, and well-seasoned.

3. Combine everything

  • Gently fold warm potatoes, chopped eggs, onion, and celery with the dressing.
  • Mix until creamy but still chunky.

4. Chill

Refrigerate at least 1–2 hours (overnight is best).
Potato salad tastes better once flavors blend.

5. Garnish

Sprinkle with a little paprika or chopped green onions before serving.
