Shepherd’s Pie

Here’s a classic and hearty Shepherd’s Pie recipe that’s comforting and full of flavor:


Ingredients (serves 4–6)

For the filling:

  • 1 lb (450 g) ground lamb (or beef for cottage pie)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 cup frozen peas
  • 1 cup corn kernels (optional)
  • 2 tbsp tomato paste
  • 1 cup beef or vegetable broth
  • 1 tsp Worcestershire sauce
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt and black pepper, to taste
  • 2 tbsp olive oil

For the mashed potato topping:

  • 2 lbs (900 g) potatoes, peeled and chopped
  • 4 tbsp butter
  • ½ cup milk (more if needed)
  • Salt and pepper, to taste
  • ½ cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Prepare mashed potatoes:
  • Boil potatoes in salted water until tender (15–20 minutes).
  • Drain and mash with butter, milk, salt, and pepper until smooth. Set aside.
  1. Cook the filling:
  • Heat olive oil in a large skillet over medium heat.
  • Sauté onions, garlic, and carrots until softened (5–7 minutes).
  • Add ground lamb, cook until browned, breaking it up with a spoon.
  • Stir in tomato paste, broth, Worcestershire sauce, thyme, salt, and pepper.
  • Simmer for 10 minutes until slightly thickened.
  • Stir in peas and corn; cook for 2–3 more minutes.
  1. Assemble the pie:
  • Preheat oven to 400°F (200°C).
  • Spread meat and vegetable filling in a baking dish.
  • Spoon mashed potatoes over the top and spread evenly.
  • Optional: sprinkle shredded cheddar cheese on top.
  1. Bake:
  • Bake for 20–25 minutes, until the top is golden brown.
  • For extra color, broil for 2–3 minutes at the end.
  1. Serve:
  • Let rest for 5 minutes before serving. Enjoy with a simple green salad or roasted vegetables.

💡 Tips:

  • For extra flavor, mix a little sour cream or cream cheese into the mashed potatoes.
  • You can prepare the filling ahead of time; assemble and bake just before serving.
  • Swap lamb for beef for a “Cottage Pie” variation.
