Instructions

  1. Melt butter in a skillet over medium heat.
  2. Stir in flour and cook 1 minute to form a roux.
  3. Slowly whisk in the milk, stirring constantly until smooth and thickened.
  4. Add black pepper and optional seasonings.

3. Add the Beef

  1. Stir in the chipped beef strips.
  2. Simmer 2–3 minutes until heated and slightly thickened.
  3. Taste; add salt only if needed (the beef is usually salty enough).

4. Serve

  • Spoon the creamed chipped beef generously over hot buttered toast.
  • Add extra pepper on top if desired.

Add 2–3 tablespoons of cream cheese or replace ½ cup of the milk with heavy cream.

Thicker Sauce
