Here’s a cozy, hearty Potato Meatball Bake — like a casserole meets comfort food. Creamy potatoes, saucy meatballs, and melty cheese baked together until bubbling. 😋🔥


⭐ Potato Meatball Bake

Ingredients

  • 3–4 cups frozen meatballs (or homemade, fully cooked)
  • 4–5 medium potatoes, thinly sliced
  • 1 medium onion, sliced (optional)
  • 1 cup shredded cheese (mozzarella, cheddar, or mixed)
  • 1½ cups cream or milk (or a mix)
  • 1 can (10.5 oz) cream of mushroom soup or 1 cup homemade white sauce
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt + ½ tsp pepper
  • Optional add-ins: spinach, corn, peas, mushrooms

🍳 Instructions

1. Prep the sauce

In a bowl, whisk together:

  • cream/milk
  • cream of mushroom soup
  • garlic powder
  • paprika
  • salt & pepper

This becomes the creamy bake sauce.


2. Assemble the bake

In a greased 9×13 baking dish:

  1. Layer potatoes across the bottom.
  2. Sprinkle with a little salt & pepper.
  3. Add onion slices if using.
  4. Add meatballs evenly over the potatoes.
  5. Pour the creamy sauce over everything.
  6. Cover with foil.

3. Bake

  • Bake at 375°F (190°C) for 50–60 minutes until the potatoes are soft.
  • Remove foil, sprinkle with cheese, and bake another 10–15 minutes until bubbly and golden.

4. Rest & serve

Let it sit 5–10 minutes so it thickens slightly.
Serve warm — it’s super hearty and satisfying!

Italian Style:

  • Add marinara + mozzarella + Italian seasoning.

Swedish Style:

  • Use Swedish meatballs + creamy gravy instead of mushroom soup.

Cheesy Ranch Version:

  • Add 1–2 tbsp ranch seasoning to the sauce + cheddar cheese.

Loaded Baked Potato Style:

  • Add bacon, green onions, sour cream drizzle after baking.
