POTATO FRITTERS

Ah, potato fritters! Crispy on the outside, soft and savory on the inside — perfect as a snack, side dish, or even breakfast. Here’s a simple and reliable way to make them:


Ingredients (for ~4 servings)

  • 3 medium potatoes
  • 1 small onion (optional)
  • 1–2 eggs
  • 3–4 tbsp flour (or more if needed)
  • Salt and pepper to taste
  • ½ tsp paprika or garlic powder (optional)
  • Oil for frying (vegetable or canola)

Instructions

  1. Prep the potatoes
    • Peel and grate the potatoes using a box grater or food processor.
    • Optional: Grate the onion as well for extra flavor.
    • Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible — this is key for crispiness.
  2. Mix the batter
    • Transfer the grated potatoes (and onion) to a bowl.
    • Add eggs, flour, salt, pepper, and optional spices.
    • Mix until it forms a slightly sticky, cohesive mixture.
  3. Heat the oil
    • Pour oil into a frying pan to cover the bottom (about ¼ inch).
    • Heat over medium heat until hot but not smoking.
  4. Fry the fritters
    • Scoop 2–3 tbsp of the potato mixture per fritter and flatten slightly in the pan.
    • Fry 3–5 minutes per side, until golden brown and crispy.
    • Remove and drain on paper towels.
  5. Serve
    • Enjoy hot with sour cream, ketchup, or a chutney of your choice.

  • Make sure to squeeze out all excess moisture from the potatoes.
  • Don’t overcrowd the pan — give each fritter space to crisp.
