For the Pork Chops

  • 4 bone-in or boneless pork chops (about 1 inch thick)

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika (optional)

  • 1 teaspoon dried thyme or rosemary (optional)

For the Baked Potatoes

  • 4 medium russet potatoes

  • 2 tablespoons olive oil

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • Optional toppings: butter, sour cream, shredded cheese, chives


Instructions

1. Prepare the Potatoes

  1. Preheat oven to 400°F (200°C).

  2. Wash and scrub the potatoes; pat dry.

  3. Rub potatoes with olive oil, salt, and pepper.

  4. Prick each potato a few times with a fork.

  5. Bake directly on the oven rack or on a baking sheet for 45–60 minutes, until tender when pierced with a fork.

2. Prepare the Pork Chops

  1. While potatoes bake, season pork chops with salt, pepper, garlic powder, paprika, and thyme/rosemary.

  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

  3. Sear pork chops 3–4 minutes per side until golden brown.

  4. Reduce heat to medium, cover, and cook 5–8 more minutes, until internal temperature reaches 145°F (63°C).

  5. Let chops rest for 3–5 minutes before serving.

3. Serve

  • Plate pork chops alongside baked potatoes.

  • Top potatoes with butter, sour cream, cheese, or chives as desired.

  • Optional: Serve with steamed vegetables or a simple salad for a complete meal.


Tips & Variations

  • For extra flavor, brush pork chops with a mixture of mustard and honey before cooking.

  • You can also wrap potatoes in foil if you prefer softer skin.

  • Try roasting the pork chops in the oven at 375°F (190°C) for 20–25 minutes if you prefer baking instead of pan-searing.
