Here’s a delicious Pineapple Strawberry Pound Cake—moist, fruity, and perfect for holidays, potlucks, or summer gatherings. You can use fresh or canned fruit, and it bakes beautifully in a Bundt or loaf pan.

Ingredients

Pound Cake:

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup crushed pineapple, well-drained
  • ½ cup finely chopped strawberries (fresh or frozen, patted dry)
  • ½ cup sour cream (for moisture)
  • 2 tsp vanilla extract
  • Optional: 1 tsp strawberry extract or pineapple extract

Strawberry–Pineapple Glaze (optional but amazing):

  • 1 cup powdered sugar
  • 2–3 tbsp pineapple juice or strawberry juice
  • A few drops of red food coloring (optional)

Instructions

1. Prep

  • Preheat oven to 325°F (165°C).
  • Grease and flour a Bundt pan or two loaf pans.

2. Cream butter and sugar

  • Beat softened butter and sugar together for 4–5 minutes until pale and fluffy.

3. Add eggs

  • Add eggs one at a time, beating well after each.

4. Mix dry ingredients

  • In a bowl, whisk flour, baking powder, and salt.

5. Add dry ingredients + sour cream

  • Add the dry mixture to the butter mixture alternating with the sour cream.
    Begin and end with dry ingredients.

6. Add fruit + flavor

  • Fold in crushed pineapple and chopped strawberries gently.
  • Stir in vanilla (and strawberry/pineapple extract if using).
    Don’t overmix to keep the cake tender.

7. Bake

  • Pour batter into prepared pan.
  • Bake 75–90 minutes or until a toothpick inserted in the center comes out clean.
  • Cool in pan 10–15 minutes, then turn out onto a rack to cool completely.

8. Glaze (optional)

  • Mix powdered sugar with pineapple juice or strawberry juice until smooth.
  • Drizzle over cooled cake.

  • Drain pineapple very well to avoid excess moisture.
  • Pat strawberries dry to prevent soggy spots.
  • For extra strawberry flavor, fold in ¼ cup strawberry puree (adjust flour +2 tbsp).
  • Serve with whipped cream or a scoop of vanilla ice cream.
