Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup pineapple juice (preferably fresh or canned)
  • ½ cup crushed pineapple, drained (optional, for extra moisture)

For the Glaze (optional):

  • ¼ cup pineapple juice
  • 2–3 tbsp powdered sugar

Instructions

  1. Preheat oven:
    Preheat your oven to 350°F (175°C). Grease and flour an 8-inch or 9-inch cake pan.
  2. Mix dry ingredients:
    In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar:
    In a separate bowl, beat the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. Combine wet and dry ingredients:
    Gradually add the dry ingredients to the butter mixture, alternating with pineapple juice. Start and end with dry ingredients. Fold in crushed pineapple if using.
  5. Bake the cake:
    Pour batter into the prepared pan and smooth the top. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  6. Optional glaze:
    Mix pineapple juice and powdered sugar to make a thin glaze. Drizzle over the cooled cake for extra flavor and moisture.
