Instructions

Step 1: Make the cookie dough

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix into the butter mixture until just combined.

Step 2: Prepare the cheesecake filling

  1. In a small bowl, beat together cream cheese, sugar, and vanilla extract until smooth and creamy.

Step 3: Assemble the cookies

  1. Roll cookie dough into 1-inch balls and place on the prepared baking sheet.
  2. Press your thumb or the back of a spoon into the center of each cookie to create a small well.
  3. Fill each well with about 1 teaspoon of the cheesecake mixture.

Step 4: Bake

  1. Bake for 12–15 minutes, or until cookie edges are lightly golden.
