Posted on December 1, 2025 by Admin

Here’s an easy, sweet, and totally addictive recipe for No-Bake Pecan Pie Balls—all the classic pecan pie flavors rolled into bite-sized treats and dipped in chocolate. Perfect for holidays, gifting, or snacking!

🥧 Pecan Pie Balls (No-Bake)

Ingredients (makes 20–24 balls)

  • 1 1/2 cups pecans, finely chopped
  • 1 cup graham cracker crumbs
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup or corn syrup
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon (optional)
  • Pinch of salt
  • 1–1 1/2 cups chocolate (milk, dark, or white) for dipping
  • Optional: extra chopped pecans for sprinkling

Instructions

1. Make the Filling

  1. In a mixing bowl, combine chopped pecans, graham cracker crumbs, brown sugar, and salt.
  2. Add melted butter, maple (or corn) syrup, vanilla, and cinnamon.
  3. Stir until mixture is thick and sticky and holds together when pressed.

2. Roll into Balls

  1. Scoop out 1 tablespoon of the mixture at a time.
  2. Roll into balls using your hands.
  3. Place on a parchment-lined tray.
  4. Chill in the freezer for 15–20 minutes until firm.

3. Dip in Chocolate

  1. Melt chocolate in the microwave (30-second intervals, stirring between).
  2. Using a fork or dipping tool, dip each ball into the melted chocolate.
  3. Let excess drip off before placing back on parchment.
  4. Immediately sprinkle with extra pecans if desired.

4. Set and Serve

  • Refrigerate 10–15 minutes to allow chocolate to harden.
  • Store in an airtight container in the fridge for up to 1 week (or freeze up to 2 months).

⭐ Tips & Variations

  • Extra gooey: Add an extra tablespoon of syrup.
  • Less sweet: Use dark chocolate and reduce brown sugar slightly.
  • White chocolate drizzle: After dipping, drizzle with white chocolate for a bakery-style look.
  • Bourbon Pecan Balls: Add 1–2 teaspoons bourbon to the filling (SO good for holidays!).
