Pan-Fried Chicken Dumplings

Here’s a perfect, foolproof recipe for crispy-bottom, juicy-inside Pan-Fried Chicken Dumplings (a.k.a. potstickers). These cook up golden and crunchy on the bottom, tender on top, and full of savory chicken filling.


🥟 Pan-Fried Chicken Dumplings (Potstickers)

Ingredients (about 25–30 dumplings):

Filling:

  • 1 lb ground chicken
  • 1 cup finely shredded cabbage (napa or green)
  • 2 green onions, finely sliced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • ½ tsp salt
  • ¼ tsp white or black pepper

For wrapping & cooking:

  • Dumpling wrappers (round)
  • 2–3 tbsp cooking oil
  • ⅓ cup water (for steaming)
  • Optional: 1 tsp flour + 1 tsp cornstarch mixed into the water for a lacey, crispy skirt

Dipping sauce (optional but amazing):

  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp chili oil or sesame oil
  • ½ tsp sugar
  • Thinly sliced green onions

Instructions

1. Make the filling

In a bowl, mix everything together until slightly sticky—this helps the dumplings stay juicy.

2. Fill the dumplings

  • Place 1–2 tsp filling in the center of a wrapper.
  • Wet the edge with a little water.
  • Fold in half and pleat the top seam tightly.
  • Make sure they’re sealed well.

3. Heat the pan

Place a large nonstick skillet over medium-high heat.
Add 1–2 tbsp oil.

4. Pan-fry the bottoms

Set dumplings flat-side down in the skillet.
Cook 2–3 minutes until the bottoms turn golden brown.

5. Steam them

Reduce heat to medium.
Carefully pour in ⅓ cup water (or the cornstarch water for extra crisp).
Immediately cover with a lid.
Let steam 6–7 minutes until water evaporates.

6. Crisp again

Remove lid.
Let the dumplings continue cooking another 1–2 minutes to re-crisp the bottoms.

7. Serve

Serve hot with dipping sauce.


⭐ Tips for Perfect Dumplings

  • Don’t overfill — it makes sealing harder.
  • Keep wrappers covered with a damp towel so they don’t dry out.
  • Ground chicken thigh makes the juiciest dumplings.
  • Add a little chopped shrimp if you want luxury-level potstickers.
