🥣 Hungarian Green Bean Soup

Ingredients

  • 500 g green beans (fresh or frozen)
  • 1 onion, finely chopped
  • 1–2 cloves garlic
  • 1 tbsp oil or butter
  • 1 tsp sweet Hungarian paprika
  • 1 bay leaf
  • Salt & black pepper to taste
  • 1–1.2 L water or vegetable broth

Optional (traditional but adjustable):

  • 1 small potato, diced (for body)
  • A splash of vinegar or lemon juice
  • 2–3 tbsp sour cream (for serving)

How to Make It

  1. In a pot, heat oil and sauté the onion until soft.
  2. Add garlic, stir briefly.
  3. Remove from heat, add paprika (prevents bitterness), stir.
  4. Add green beans, bay leaf, salt, pepper.
  5. Pour in water/broth and add potato if using.
  6. Simmer 20–25 minutes until beans are tender.
  7. Finish with a little vinegar or lemon juice to taste.
  8. Serve hot, optionally with a spoon of sour cream.

Tips

  • For a lighter, flour-free version, skip any roux — this soup is naturally flavorful.
  • For a protein boost, add white beans or serve with boiled eggs.
  • Tastes even better the next day.
