Here’s a delicious and crispy recipe for Garlic Parmesan Potato Wedges—flavor-packed, golden, and perfect as a snack or side dish.


Ingredients (serves 4)

  • 4 medium russet potatoes
  • 3 tbsp olive oil
  • 3–4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 tsp paprika (or smoked paprika)
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • Fresh parsley, chopped (for garnish)
  • Optional: extra Parmesan for serving

Instructions

1. Preheat oven:

  • 425°F (220°C).
  • Line a baking sheet with parchment paper.

2. Prepare the potatoes:

  • Wash potatoes and cut each one into 8 thick wedges.
  • Pat dry with a paper towel for crispier results.

3. Season the wedges:

  • In a large bowl, combine olive oil, garlic, Parmesan, Italian seasoning, paprika, salt, and pepper.
  • Toss potato wedges in the mixture until evenly coated.

4. Arrange on baking sheet:

  • Place wedges skin-side down in a single layer so they crisp evenly.

5. Bake:

  • Bake 35–40 minutes, flipping halfway, until golden, crispy, and tender inside.

6. Serve:

  • Sprinkle with fresh parsley and extra Parmesan.
  • Serve with ranch, garlic aioli, or ketchup.

Tips for Extra Crispiness

  • Soak wedges in cold water 20 minutes, then dry well to remove starch.
  • Use convection mode if available.
  • Add 1 tbsp cornstarch to seasoning mix for even crunchier results.
