🥩 Garlic Butter Steak Bites with Creamy Pasta
Serves: 2–3
Ingredients
For the steak bites
-
1 lb sirloin, ribeye, or filet mignon, cut into 1-inch cubes
-
Salt & black pepper
-
2–3 tbsp olive oil
-
3 tbsp unsalted butter
-
4 garlic cloves, minced
-
1 tsp fresh thyme or rosemary (optional)
For the creamy pasta
-
8 oz pasta (fettuccine, penne, or your favorite)
-
2 tbsp butter
-
2 cloves garlic, minced
-
1 cup heavy cream
-
1/2 cup grated Parmesan
-
1/4 tsp red pepper flakes (optional)
-
Salt & black pepper to taste
-
2 tbsp chopped parsley, for garnish
Instructions
1. Cook the pasta
-
Boil pasta in salted water according to package directions.
-
Drain, reserving 1/2 cup pasta water, and set aside.
2. Sear the steak bites
-
Pat steak cubes very dry; season generously with salt & pepper.
-
Heat olive oil in a large skillet over medium-high heat.
-
Add steak in a single layer (don’t crowd) and sear 2–3 minutes per side until browned.
-
Remove steak and set aside.
3. Make garlic butter
-
In the same skillet, reduce heat to medium.
-
Add 3 tbsp butter, garlic, and thyme/rosemary (if using).
-
Cook 1–2 minutes until fragrant.
-
Return steak to skillet, toss to coat in garlic butter. Remove from pan to keep warm.
4. Make creamy pasta sauce
-
In a separate skillet, melt 2 tbsp butter over medium heat.
-
Add garlic and sauté 1 minute.
-
Stir in heavy cream and simmer 2–3 minutes.
-
Add Parmesan and stir until melted and smooth.
-
If sauce is too thick, loosen with reserved pasta water.
-
Season with salt, black pepper, and red pepper flakes (optional).
5. Combine and serve
-
Toss cooked pasta in creamy sauce.
-
Top with garlic butter steak bites.
-
Garnish with chopped parsley.
-
Serve immediately with extra Parmesan if desired.
Tips
-
Use high heat for the steak — ensures a nice sear without overcooking.
-
Pat meat dry to get a golden crust.
-
Don’t overcook the pasta — al dente is perfect for creamy sauces.
-
Optional add-ins: mushrooms, spinach, or sun-dried tomatoes for extra flavor.
-
Make it extra garlicky: sauté additional garlic in the pasta sauce or butter.
I can also give you a one-pan version where you cook the steak and pasta together in the creamy sauce for fewer dishes.
