Instructions

1. Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook penne according to package instructions until al dente. Drain and set aside, reserving 1/2 cup pasta water.

2. Cook the Chicken

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken with salt and pepper.
  3. Cook chicken until golden and cooked through, 5–7 minutes. Remove from skillet and set aside.

3. Sauté Vegetables

  1. In the same skillet, sauté mushrooms until browned, about 4–5 minutes.

  3. Add garlic and cook 30 seconds until fragrant.

4. Make the Creamy Sauce

  1. Reduce heat to medium. Add heavy cream and chicken broth, stirring to combine.
  2. Stir in Parmesan cheese, Dijon mustard, and red pepper flakes. Simmer 2–3 minutes until slightly thickened.
  3. Season with salt and pepper to taste.

5. Combine Everything

  1. Return chicken to the skillet.
  2. Add cooked penne and toss to coat in the sauce.
  3. Add reserved pasta water as needed to reach desired consistency.

6. Serve

  • Garnish with fresh parsley and extra Parmesan.
  • Serve immediately with garlic bread or a side salad.
