Here’s a classic Chiffon Cake recipe—light, airy, and slightly sweet. Chiffon cake is a hybrid between a sponge and oil cake: it’s fluffy like a sponge cake but moist thanks to oil. Perfect for birthdays, tea time, or any special occasion.


🍰 Classic Chiffon Cake

Ingredients (9-inch cake)

Dry Ingredients

  • 2 1/4 cups (280 g) all-purpose flour
  • 1 1/2 cups (300 g) granulated sugar (divided: 1 cup + 1/2 cup)
  • 1 tbsp baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 7 large eggs, separated
  • 3/4 cup (180 ml) water
  • 1/2 cup (120 ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 tsp lemon zest (optional, for flavor)

Meringue

  • 7 egg whites
  • 1/2 tsp cream of tartar

1. Prepare Dry Ingredients

  • In a large bowl, whisk together flour, 1 cup sugar, baking powder, and salt.
  • Set aside.

2. Mix Wet Ingredients

  • In a separate bowl, whisk together egg yolks, water, oil, vanilla, and lemon zest.
  • Gradually stir into dry ingredients until smooth.

3. Make the Meringue

  • In a clean bowl, beat egg whites with cream of tartar until foamy.
  • Gradually add remaining 1/2 cup sugar.
  • Beat until stiff peaks form.

4. Fold Meringue Into Batter

  • Gently fold 1/3 of the meringue into the batter to lighten it.
  • Fold in remaining meringue carefully to avoid deflating the batter.

5. Bake

  • Preheat oven to 325°F (163°C).
  • Pour batter into an un-greased 10-inch tube pan (important for the cake to climb the sides).
  • Bake 55–65 minutes or until a toothpick comes out clean.

6. Cool

  • Invert the pan immediately onto a bottle or funnel to cool completely (prevents the cake from collapsing).
  • Once cooled, run a knife around the edges and the center tube to release the cake.

7. Serve

  • Dust with powdered sugar, or top with whipped cream and fresh fruit.

  • Do not grease the pan; the batter needs to cling to the sides to rise.
  • Fold gently—overmixing will deflate the meringue.
  • Room-temperature eggs whip better for meringue.
