🍲 Classic Chicken Soup

Serves: 4–6
Time: 1–1.5 hours

Ingredients

  • 1 whole chicken (3–4 lbs) or 2–3 lbs chicken parts (with bones)
  • 10 cups water
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 3–4 garlic cloves, smashed
  • 1–2 bay leaves
  • 1 tsp whole black peppercorns
  • Salt to taste
  • Optional: fresh parsley, thyme, lemon juice
  • Optional: noodles, rice, or barley

Instructions

1. Make the broth

  1. Place chicken in a large pot with water.
  2. Bring to a gentle boil, then reduce to a simmer.
  3. Skim off any foam on the surface.
  4. Add onion, garlic, bay leaves, and peppercorns.
  5. Simmer 45–60 minutes, until chicken is cooked and tender.

2. Remove chicken

  1. Carefully remove chicken from the pot.
  2. Let cool slightly, then shred meat off the bones. Discard skin and bones (or save for extra broth).

3. Cook the vegetables

  1. Add carrots and celery to the simmering broth.
  2. Cook 10–15 minutes until vegetables are tender.
  3. Optional: add noodles, rice, or barley and cook until done.

4. Combine & season

  1. Add shredded chicken back to the pot.
  2. Season with salt, pepper, and herbs to taste.
  3. Optional: squeeze a little lemon juice for brightness.

5. Serve

  • Ladle hot soup into bowls.
  • Garnish with fresh parsley if desired.
  • Enjoy with bread or crackers.

  • Use bone-in chicken for richer flavor and collagen.
