Ingredients (makes 8–10 pancakes)

  • 3 cups grated potatoes (about 3 medium russets)
  • ½ cup shredded cheese (cheddar, mozzarella, or a mix)
  • ¼ cup finely chopped onion (optional)
  • 1 large egg
  • ¼ cup flour (or 2–3 tbsp if potatoes are dry)
  • 1 tsp salt
  • ½ tsp pepper
  • Optional: paprika, garlic powder, chopped chives
  • Oil or butter for frying

🍳 Instructions

1. Prep the potatoes

  • Grate the potatoes and squeeze out as much moisture as possible using a clean towel or paper towels.
  • This step is key for crispy pancakes.

2. Make the mixture

  • In a bowl combine:
    • Grated potatoes
    • Cheese
    • Onion
    • Egg
    • Flour
    • Salt & pepper
    • Any extra seasonings
  • Mix until the batter holds together.

3. Fry the pancakes
