Here’s a fresh, crunchy, sweet-tangy Carrot Apple Slaw that takes just minutes to make. Perfect as a side for BBQ, sandwiches, chicken, or as a light snack!

Ingredients

Slaw

  • 3 cups shredded carrots (about 4–5 medium carrots)

  • 2 apples, julienned or shredded (Honeycrisp, Gala, or Fuji work great)

  • 1/2 cup shredded cabbage (optional, but adds crunch)

  • 1/3 cup dried cranberries or raisins

  • 1/4 cup chopped pecans or walnuts (optional)

  • 2 green onions, thinly sliced (optional)

Dressing

  • 1/3 cup mayonnaise

  • 2 tbsp plain Greek yogurt or sour cream

  • 1 tbsp honey or maple syrup

  • 1 tbsp apple cider vinegar

  • 1 tsp Dijon mustard

  • Salt & pepper to taste

1. Prep the slaw

  • In a large bowl, combine:

    • Shredded carrots

    • Apples

    • Cabbage (if using)

    • Cranberries/raisins

    • Nuts

    • Green onions

2. Mix the dressing

  • Whisk together:

    • Mayo

    • Greek yogurt

    • Honey

    • Apple cider vinegar

    • Dijon

    • Salt & pepper

3. Combine

  • Pour dressing over slaw ingredients.

  • Toss until everything is evenly coated.

4. Chill & serve

  • Serve immediately for crisp texture
