Here’s a hearty and flavorful recipe for Beef Green Chili (Green Chili with Beef)—a comforting, slightly spicy stew perfect for chilly days or casual dinners.


🌶️ Beef Green Chili

Ingredients (serves 4–6)

  • 1.5 lbs (680 g) beef stew meat or chuck, cut into 1-inch cubes
  • 2 tbsp vegetable oil
  • Salt and black pepper, to taste
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2–3 cups roasted green chilies, chopped (mild or medium; Hatch or Anaheim work well)
  • 1–2 jalapeños, seeded and chopped (optional, for heat)
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika (optional)
  • 4 cups beef broth
  • 1 (14.5 oz) can diced tomatoes (optional for a slightly tangy base)
  • 1 cup frozen or fresh corn (optional)
  • 1/2 cup chopped fresh cilantro (for garnish)
  • Optional toppings: shredded cheese, sour cream, lime wedges, tortilla chips

Instructions

1. Brown the Beef

  1. Heat oil in a large pot or Dutch oven over medium-high heat.
  2. Season beef with salt and pepper.
  3. Brown beef cubes on all sides in batches, then remove and set aside.

2. Sauté Aromatics

  1. In the same pot, add onion and cook 4–5 minutes until softened.
  2. Add garlic, cumin, oregano, and smoked paprika; cook 1 minute until fragrant.

3. Add Chilies and Liquids

  1. Stir in roasted green chilies and jalapeños.
  2. Return beef to the pot and add beef broth.
  3. If using, add diced tomatoes. Bring to a boil, then reduce heat to low.

4. Simmer

  1. Cover and simmer 1.5–2 hours, or until beef is tender.
  2. Stir occasionally, adding more broth if needed for desired consistency.

5. Add Optional Ingredients

  • In the last 10 minutes of cooking, stir in corn if using.
  • Adjust salt and pepper to taste.

6. Serve

  • Ladle chili into bowls and garnish with fresh cilantro, shredded cheese, sour cream, or a squeeze of lime.
  • Serve with warm tortillas, cornbread, or tortilla chips.

Tips & Variations

  • Spicier chili: Add green chili powder or extra jalapeños to taste.
  • Thicker chili: Simmer uncovered for 15–20 minutes or mash some cooked beans into the stew (optional).
  • Slow cooker version: Brown beef and sauté onions, then transfer to slow cooker with remaining ingredients. Cook on low 6–8 hours or high 3–4 hours.
  • White green chili: Omit tomatoes for a traditional “white” green chili; adjust seasoning with extra cumin and cilantro.
