Baked Cottage Cheese Eggs

Posted on December 2, 2025 by Admin

Here’s a simple and delicious recipe for Baked Cottage Cheese Eggs—a high-protein, low-carb breakfast or brunch option. It’s creamy, cheesy, and easy to customize.

Ingredients (serves 2)

  • 4 large eggs
  • ½ cup cottage cheese (full-fat or low-fat)
  • 2 tablespoons milk or cream
  • Salt and pepper, to taste
  • Optional add-ins: chopped spinach, diced tomatoes, bell peppers, herbs, or cooked bacon/ham
  • Optional topping: shredded cheese or paprika

Instructions

  1. Preheat oven:
    • Set oven to 375°F (190°C).
  2. Prepare the mixture:
    • In a bowl, whisk together eggs, cottage cheese, milk, salt, and pepper.
    • Stir in any optional vegetables, herbs, or cooked meat.
  3. Pour into baking dish:
    • Lightly grease a small baking dish or individual ramekins.
    • Pour the egg and cottage cheese mixture in evenly.
  4. Bake:
    • Bake 20–25 minutes, or until eggs are set and lightly golden on top.
    • Optional: broil for 1–2 minutes to brown the top slightly.
  5. Serve:
    • Let it cool 1–2 minutes, then slice or scoop out and enjoy.

✅ Tips:

  • For extra flavor, add garlic powder, onion powder, or fresh herbs.
  • You can make this ahead of time, refrigerate, and reheat for a quick breakfast.
  • For a fluffier texture, separate the egg whites, beat them, and fold them into the mixture before baking.

I can also give a single-serving microwave version of baked cottage cheese eggs that’s ready in under 5 minutes—perfect for busy mornings. Do you want me to share that?
