🥓🍄🧀 Bacon Mushroom Swiss Cheese Meatloaf

2 lbs ground beef (or a mix of beef and pork)

1 cup mushrooms, finely chopped

1 medium onion, finely chopped

2–3 cloves garlic, minced

1 cup breadcrumbs (or panko)

1/2 cup milk

2 large eggs

1 tsp Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

1 tsp dried thyme or Italian seasoning
Cheese & Bacon

4–6 slices Swiss cheese

6 slices bacon
Optional Glaze

1/2 cup ketchup
-
2 tbsp brown sugar
-
1 tsp Dijon mustard
Instructions
1. Prep

Preheat oven to 375°F (190°C).

Line a baking sheet or loaf pan with parchment or lightly grease.
2. Make the meatloaf mixture

In a large bowl, combine ground beef, chopped mushrooms, onion, garlic, breadcrumbs, milk, eggs, Worcestershire sauce, salt, pepper, and thyme.

Mix until just combined — don’t overwork.
3. Shape and assemble

Shape mixture into a loaf on the baking sheet or in the pan.

Lay Swiss cheese slices on top.

Drape bacon slices over the cheese.
4. Optional glaze

Mix ketchup, brown sugar, and mustard.

Brush over the bacon.
5. Bake

Bake 60–70 minutes until meatloaf reaches an internal temperature of 160°F (71°C).

If bacon isn’t crisp enough, broil 2–3 minutes at the end.
6. Rest & serve

Let meatloaf rest 10 minutes before slicing.

Serve with mashed potatoes, roasted veggies, or a salad.
