Ingredients

  • ½ tsp cinnamon (optional)
  • ¼ tsp smoked paprika (optional for depth)

For the goat cheese filling:

  • 4 oz goat cheese, softened
  • 2 tbsp heavy cream OR Greek yogurt
  • 1–2 tsp honey
  • Pinch of salt

For the cranberry drizzle:

  • 1 cup fresh or frozen cranberries
  • ¼ cup water
  • ¼ cup sugar or honey
  • 1 tsp orange zest or 1 tbsp orange juice
  • Pinch of salt

Optional toppings:

  • Toasted pecans or walnuts
  • Fresh thyme
  • Pomegranate seeds
  • Extra honey drizzle

Instructions

1. Prepare the squash

  1. Preheat oven to 400°F (205°C).
  2. Slice acorn squash into ½–¾ inch rings or wedges.
  3. Scoop out seeds.
  4. Place on a parchment-lined baking sheet.
  5. Brush with olive oil and honey.
  6. Season with salt, pepper, and optional spices.

2. Roast

Roast for 25–35 minutes, flipping halfway, until golden and tender with caramelized edges.


3. Make the goat cheese filling

In a small bowl, mix:

  • Goat cheese
  • Heavy cream (or yogurt)
  • Honey
  • Salt

Whip until creamy and smooth.
Chill until ready to serve.


4. Make the cranberry drizzle

  1. In a saucepan, combine cranberries, water, sugar (or honey), salt, and orange zest/juice.
  2. Cook over medium heat until cranberries burst and sauce thickens (about 8–10 minutes).
  3. Mash lightly for a smoother drizzle or leave chunky for texture.
  4. Cool slightly.

5. Assemble

  1. Arrange roasted acorn squash on a serving plate.
  2. Add a small spoonful of goat cheese onto each squash piece or serve in dollops.
  3. Drizzle warm cranberry sauce over the top.
  4. Finish with toasted nuts, thyme, or extra honey if desired.
