Ingredients (serves 4–6)

  • 1 baguette or rustic Italian bread, sliced ½-inch thick
  • 2 tbsp olive oil (for brushing bread)
  • 1–2 cloves garlic, halved
  • 1 pint cherry or grape tomatoes, halved
  • 1–2 tsp balsamic glaze (optional)
  • Salt and pepper, to taste
  • 1 ball burrata cheese (8 oz)
  • Fresh basil leaves, torn

Instructions

1. Prepare the Bread

  1. Preheat oven to 400°F (200°C).
  2. Arrange bread slices on a baking sheet.
  3. Brush lightly with olive oil.
  4. Bake 5–7 minutes until golden and crisp.
  5. Optional: rub the warm toast with cut garlic for extra flavor.

2. Prepare the Topping

  1. Halve the tomatoes.
  2. Toss with a pinch of salt, pepper, and a little olive oil.
  3. Tear or slice basil leaves.

3. Assemble the Bruschetta

  1. Place burrata on each toasted bread slice — either a whole small piece or pulled apart for a creamy spread.
  2. Top with tomatoes and basil.
  3. Drizzle with olive oil and, if desired, balsamic glaze.
  4. Serve immediately.

Tips

  • Use ripe, flavorful tomatoes for the best taste.
  • Burrata is best served room temperature to get that creamy center.
  • Add a pinch of chili flakes for a subtle heat.
  • For a heartier version, add prosciutto or a drizzle of pesto.
