Here’s a fun, crowd-pleasing recipe for Mini Strawberry Cheesecake Tacos — crispy cinnamon-sugar tortilla shells filled with creamy cheesecake filling and fresh strawberries. They’re adorable, easy, and perfect for parties!


🍓 Mini Strawberry Cheesecake Tacos

Ingredients

Taco Shells

  • 10 small flour tortillas (6-inch)
  • ½ cup sugar
  • 1 tsp cinnamon
  • 4 tbsp melted butter

Cheesecake Filling

  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup heavy whipping cream (or Cool Whip)

Strawberry Topping

  • 2 cups diced fresh strawberries
  • 2–3 tbsp sugar (adjust to taste)
  • 1 tbsp lemon juice
  • Optional: 1 tsp cornstarch + 1 tbsp water (for thicker sauce)

Instructions

1. Make the Mini Taco Shells

  1. Preheat oven to 375°F (190°C).
  2. Using a round cookie cutter (3–4 inch), cut circles from tortillas.
  3. Mix sugar and cinnamon in a small bowl.
  4. Brush each tortilla circle with melted butter, then coat in cinnamon-sugar.
  5. Drape each circle over the bars of an upside-down muffin tin (to form a taco shape).
  6. Bake 5–7 minutes, or until golden and crisp.
  7. Cool completely.

2. Make the Cheesecake Filling

  1. Beat cream cheese until smooth.
  2. Add powdered sugar and vanilla; beat again.
  3. In a separate bowl, whip heavy cream to stiff peaks.
  4. Fold whipped cream into cream cheese mixture until smooth and fluffy.
  5. Refrigerate 15–20 minutes to firm slightly.

3. Make the Strawberry Topping

  1. Mix strawberries with sugar and lemon juice.
  2. For fresh topping: let sit 10 minutes to macerate.
  3. For a thicker sauce:
    • Heat 1 cup of the strawberries with sugar and lemon juice.
    • Add cornstarch slurry and cook until glossy and thick.
    • Cool and mix with the remaining fresh strawberries.

4. Assemble the Cheesecake Tacos

  1. Pipe or spoon cheesecake filling into each taco shell.
  2. Top generously with strawberries.
  3. Serve immediately for crisp shells, or chill up to 2 hours.
