Ingredients (serves 4)

  • 4 boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika (optional for color)
  • 2 tbsp olive oil or butter for cooking

Instructions

1. Marinate the chicken

  1. In a bowl, whisk together buttermilk, salt, pepper, garlic powder, and paprika.
  2. Add chicken breasts and coat completely.
  3. Cover and refrigerate for at least 2 hours or overnight for maximum tenderness.

2. Preheat skillet or oven

  • Skillet method: Heat olive oil or butter over medium heat.
  • Oven method: Preheat oven to 375°F (190°C) and line a baking dish with foil.

3. Cook the chicken

Skillet method:

  1. Remove chicken from marinade and let excess drip off.
  2. Cook 6–7 minutes per side until golden brown and internal temperature reaches 165°F (74°C).

Oven method:

  1. Place chicken in baking dish and pour a little marinade over the top.
  2. Cover with foil and bake 25–30 minutes, removing foil for the last 5–10 minutes to brown the top.

4. Rest

  • Let chicken rest 5 minutes before slicing to retain juices.

  • Extra flavor: Add fresh herbs like thyme, rosemary, or parsley to the marinade.
  • Crispier exterior: After marinating, lightly dredge chicken in flour or breadcrumbs before skillet cooking.
