🍗 Creamy Chicken with Mushrooms and Bacon

Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts (or thighs)

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika (optional but great)

  • 4 slices bacon, chopped

  • 8 oz mushrooms, sliced (cremini or button)

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup chicken broth

  • ½ cup grated Parmesan cheese

  • 1 tsp Italian seasoning (or thyme)

  • 1 tbsp butter (optional for richness)

  • Fresh parsley, for garnish

1. Cook the bacon

  • In a large skillet, cook chopped bacon until crisp.

  • Remove bacon to a plate. Keep 1–2 tbsp bacon drippings in the pan.


2. Season and sear the chicken

  • Season chicken on both sides with salt, pepper, and paprika.

  • Sear the chicken in the bacon drippings for 4–5 minutes per side, until golden and mostly cooked through.

  • Remove chicken and set aside.


3. Cook the mushrooms

  • Add mushrooms to the same skillet.

  • Sauté until browned and moisture evaporates (5–7 minutes).

  • Add garlic and cook 30 seconds.


4. Make the creamy sauce

Add to the skillet:

  • Heavy cream

  • Chicken broth

  • Parmesan

  • Italian seasoning

  • Butter (optional)

Stir until smooth and simmer 2–3 minutes to thicken.


5. Bring it all together

  • Return chicken and bacon to the skillet.

  • Spoon sauce over everything.

  • Simmer on low 5–8 minutes until the chicken is fully cooked and sauce thickens.


6. Garnish & serve

  • Sprinkle with fresh parsley.

  • Serve over mashed potatoes, pasta, rice, or roasted vegetables.

  • Thicken the sauce: Simmer longer or add a little extra Parmesan.

  • Make it lighter: Swap half the cream for milk + 1 tsp cornstarch.

  • Flavor boost: Add a splash of white wine before the cream.

  • Use thighs: They stay juicier and are more forgiving than chicken breasts.
