Here’s a classic recipe for Croquettes — golden, crispy bites that can be filled with potato, meat, chicken, or cheese.


Classic Croquettes

Ingredients

For the Filling

  • 2 cups mashed potatoes (or finely shredded cooked chicken, ham, or cheese)
  • 1/2 cup finely chopped onion (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional, for potato croquettes)
  • 1/2 cup grated cheese (optional)

For Coating

  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs

For Frying

  • Vegetable oil or canola oil, for deep-frying

Instructions

Step 1: Prepare the Filling

  1. In a bowl, combine mashed potatoes (or chosen base), onion, salt, pepper, and any optional ingredients.
  2. Mix well until smooth and slightly firm.

Step 2: Shape the Croquettes

  1. Take small portions of the mixture and shape into cylinders or ovals (about 2–3 inches long).
  2. Set aside on a plate.

Step 3: Coat the Croquettes

  1. Roll each croquette in flour, then dip in beaten egg, and finally coat with breadcrumbs.
  2. Make sure each croquette is evenly coated.

Step 4: Fry

  1. Heat oil in a deep pan or skillet to 350°F (175°C).
  2. Fry croquettes in batches, 3–4 minutes each, until golden brown and crispy.
  3. Remove and drain on paper towels.

Step 5: Serve

  • Serve hot as a snack, appetizer, or side dish.
  • Optional dipping sauces: mustard, aioli, ketchup, or sour cream.

Tips

  • For extra flavor, add minced garlic, herbs (parsley, chives), or spices to the filling.
  • Croquettes can be baked at 400°F (200°C) for 20–25 minutes for a lighter version.
  • Chill the shaped croquettes for 30 minutes before frying to help them hold their shape.
