Here’s a simple and delicious Creamy Chicken and Carrot Spread — perfect for sandwiches, crackers, or as a dip.


Creamy Chicken and Carrot Spread

Ingredients

  • 1 cup cooked chicken, finely chopped or shredded
  • 1 medium carrot, peeled and finely grated
  • 1/4 cup mayonnaise (adjust to creaminess)
  • 2 tablespoons cream cheese (softened)
  • 1 teaspoon Dijon mustard (optional)
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste
  • 1–2 tablespoons fresh herbs (parsley, dill, or chives), finely chopped

Instructions

Step 1: Prepare the ingredients

  1. Cook chicken (boiled, roasted, or leftover) and shred or finely chop.
  2. Peel and finely grate the carrot.

Step 2: Mix the spread

  1. In a medium bowl, combine chicken, grated carrot, mayonnaise, and cream cheese.
  2. Add mustard and lemon juice.
  3. Mix until creamy and well combined.

Step 3: Season

  1. Add salt, pepper, and fresh herbs.
  2. Taste and adjust seasoning.

Step 4: Chill

  • Refrigerate for at least 30 minutes to let flavors meld.

Serve

  • Spread on toast, sandwiches, or bagels.
  • Use as a dip for crackers, celery sticks, or cucumber slices.

Tips

  • For extra flavor, add a small minced garlic clove or a pinch of smoked paprika.
  • You can substitute Greek yogurt for some of the mayonnaise to lighten it.
  • Finely chopped celery or bell pepper can be added for crunch.
