Ingredients (Marinade for 1–2 lbs / 450–900 g beef)

  • 1/2 cup orange juice (freshly squeezed is best)
  • 1/4 cup lime juice (fresh)
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1–2 tsp ground cumin
  • 1–2 tsp chili powder or paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional, for heat)
  • 1–2 tbsp soy sauce (optional, for umami)

Instructions

  1. Mix all marinade ingredients in a bowl until well combined.
  2. Place beef (flank steak, skirt steak, or sirloin) in a resealable bag or shallow dish.
  3. Pour marinade over beef, making sure it’s fully coated.
  4. Marinate in the fridge for at least 2 hours, ideally 6–8 hours. Avoid more than 24 hours—acidic juices can start breaking down the meat too much.
  5. Grill over high heat 3–5 minutes per side for medium-rare, depending on thickness.
  6. Rest the meat for 5 minutes, then slice thinly against the grain.
