Here’s a simple, delicious recipe for classic Cherry Cheesecake Bars 🍒🍰


Cherry Cheesecake Bars

Ingredients

Crust

  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup melted butter

Cheesecake Filling

  • 16 oz (2 blocks) cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Topping

  • 1½–2 cups cherry pie filling

Instructions

  1. Preheat oven to 325°F (165°C).
    Line a 9×9-inch baking pan with parchment paper.
  2. Make the crust
    • Mix graham cracker crumbs, sugar, and melted butter.
    • Press firmly into the bottom of the pan.
    • Bake for 10 minutes, then set aside.
  3. Prepare the filling
    • Beat cream cheese until smooth.
    • Add sugar and mix well.
    • Beat in eggs one at a time, then add vanilla.
  4. Assemble
    • Pour cheesecake filling over crust.
    • Spoon cherry pie filling evenly over the top.
  5. Bake
    • Bake for 35–40 minutes, until the center is just set.
  6. Cool & Chill
    • Let cool at room temperature, then refrigerate for at least 3 hours (overnight is best).
  7. Slice & Serve
    • Lift out using parchment, slice into bars, and enjoy!
