🥔 Crispy Potato Fritters
Ingredients (makes 10–12 fritters):
- 3 medium potatoes, peeled
- 1 small onion (optional but recommended)
- 2 eggs
- ½ cup all-purpose flour
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder (optional)
- ½ tsp paprika (optional)
- 2–3 tbsp fresh herbs (parsley, chives, or dill) — optional
- Oil for frying (vegetable, canola, or sunflower)
Instructions
1. Grate the potatoes
Use a box grater or food processor to shred the potatoes.
Place them in a clean kitchen towel and squeeze out as much liquid as possible — this is the key to crispiness.
2. Grate the onion
Grate the onion and squeeze lightly.
Add it to the potatoes.
3. Mix the batter
In a bowl, combine:
- potatoes
- onion
- eggs
- flour
- salt & pepper

4. Heat the oil
