For the Pork Chops

Instructions
1. Prepare the Potatoes

Preheat oven to 400°F (200°C).

Wash and scrub the potatoes; pat dry.

Rub potatoes with olive oil, salt, and pepper.

Prick each potato a few times with a fork.

Bake directly on the oven rack or on a baking sheet for 45–60 minutes, until tender when pierced with a fork.
2. Prepare the Pork Chops

While potatoes bake, season pork chops with salt, pepper, garlic powder, paprika, and thyme/rosemary.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

Sear pork chops 3–4 minutes per side until golden brown.
