Sizzling Chinese Pepper Steak with Onions

Ingredients

Serves 4

For the Beef

  • 1 pound (450 g) flank steak or sirloin, thinly sliced against the grain

  • 2 tablespoons soy sauce

  • 1 tablespoon rice wine or dry sherry

  • 1 teaspoon cornstarch

  • 1/2 teaspoon black pepper

For the Stir-Fry

  • 2 tablespoons vegetable oil (divided)

  • 1 large onion, sliced

  • 1 green bell pepper, sliced

  • 1 red bell pepper, sliced

  • 2 cloves garlic, minced

  • 1 teaspoon ginger, minced

  • 2–3 green onions, sliced (optional)

Sauce

  • 3 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1 tablespoon hoisin sauce

  • 1 teaspoon cornstarch

  • 1/2 cup beef or chicken broth

  • 1/2 teaspoon sugar

  • 1/4 teaspoon freshly ground black pepper


Instructions

  1. Marinate the beef

    • In a bowl, combine sliced beef with 2 tablespoons soy sauce, rice wine, 1 teaspoon cornstarch, and 1/2 teaspoon black pepper.

    • Let marinate for at least 15–30 minutes.

  2. Prepare the sauce

    • In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, cornstarch, broth, sugar, and black pepper. Set aside.

  3. Cook the beef

    • Heat 1 tablespoon vegetable oil in a large skillet or wok over high heat.

    • Stir-fry the beef until just browned (about 2–3 minutes). Remove and set aside.

  4. Cook the vegetables

    • In the same pan, add the remaining oil.

    • Stir-fry onions, green and red peppers for 2–3 minutes until slightly tender but still crisp.

    • Add garlic and ginger, stir-fry 30 seconds more.

  5. Combine and simmer

    • Return the beef to the pan.

    • Pour in the prepared sauce. Stir to coat and cook 1–2 minutes until sauce thickens and everything is heated through.

  6. Serve

    • Sprinkle with sliced green onions if desired.

    • Serve immediately with steamed rice or noodles.


Tips & Variations

  • For extra sizzle, use a cast iron skillet or wok for high-heat searing.

  • Adjust bell peppers and onions according to preference or seasonal availability.

  • Add a pinch of crushed red pepper for a spicy kick.
