🧀🍗 Cheesy Chicken Hashbrown Casserole

Ultra-creamy, golden, hearty — the kind of dish everyone goes back for seconds.

⭐ Ingredients (9×13 pan)

  • 1 (30–32 oz) bag frozen shredded hash browns (thawed)
  • 2 cups cooked chicken (shredded or diced)
  • 1 can cream of chicken soup (or homemade)
  • 1 cup sour cream
  • 1 cup milk
  • 2 cups shredded cheddar (or cheddar–jack)
  • 1 cup shredded mozzarella
  • 1 small onion, finely diced (optional)
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • ½ tsp pepper
  • ½ tsp salt
  • 2 tbsp melted butter
  • Optional topping: crushed Ritz crackers or panko

🔥 Instructions

  1. Preheat oven to 375°F (190°C) and grease your casserole dish.
  2. In a bowl, whisk together: soup, sour cream, milk, garlic, salt, pepper, and paprika.
  3. Fold in: chicken + hash browns + cheddar + onion (if using).
  4. Spread mixture into the casserole dish.
  5. Sprinkle mozzarella on top.
  6. If using, mix butter with Ritz/panko and scatter over the top.
  7. Bake 40–50 minutes, until golden, bubbly, and irresistible.
  8. Let sit 10 minutes before serving (it thickens beautifully).

🥘🧀 Macaroni & Cheese Shepherd’s Pie

Like an ultra-cheesy mac-and-cheese baked on top of a savory meat layer — ridiculous in the best way.

⭐ Ingredients (Serves 6–8)

Meat Layer

  • 1 lb ground beef or ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1–2 cups frozen mixed veggies (corn, peas, carrots)
  • 1 tbsp Worcestershire sauce
  • ½ tsp paprika
  • Salt + pepper to taste

Mac & Cheese Layer

  • 8 oz elbow macaroni
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • 2 cups shredded cheddar (or mix with Colby/Jack)
  • ½ tsp mustard powder (optional but incredible)
  • Salt & pepper
  • Extra cheese for topping

🔥 Instructions

1. Make the meat base

  1. Brown the ground beef with onion.
  2. Add garlic and cook 1 minute.
  3. Add veggies, Worcestershire, paprika, salt, and pepper.
  4. Simmer 3–4 minutes.
  5. Spread into the bottom of a 9×13 dish.

2. Make the mac & cheese

  1. Cook macaroni to al dente; drain.
  2. In a pot, melt butter → whisk in flour → cook 1 minute.
  3. Slowly whisk in milk.
  4. Stir until thickened.
  5. Add cheese, mustard powder, salt & pepper.
  6. Stir in the macaroni.

3. Assemble & bake

  1. Spoon mac & cheese over the meat layer.
  2. Top with more cheese (yes).
  3. Bake at 375°F (190°C) for 20–25 minutes until melty and browned.

For the Chicken Hashbrown Casserole:

  • Add bacon
  • Add green chiles
  • Swap cheddar for pepper jack
  • Add Ranch seasoning for a hidden flavor bomb

For the Mac & Cheese Shepherd’s Pie:
