⭐ Soft & Gooey Cinnamon Rolls (No-fail Recipe)

Ingredients

For the dough:

  • 1 cup warm milk (110°F / 43°C)
  • 2¼ tsp active dry yeast (1 packet)
  • ⅓ cup sugar
  • ⅓ cup melted butter
  • 1 tsp salt
  • 2 eggs
  • 4 cups all-purpose flour

For the filling:

  • ½ cup softened butter
  • 1 cup brown sugar
  • 2 tbsp ground cinnamon
  • (Optional) pinch of nutmeg

For the cream cheese frosting:

  • 4 oz cream cheese, softened
  • ¼ cup butter, softened
  • 1 cup powdered sugar
  • ½ tsp vanilla
  • Pinch of salt

🥣 Instructions

1. Make the dough

  1. In a large bowl, mix warm milk + yeast + 1 tbsp of the sugar.
    Let sit 5–10 minutes until foamy.
  2. Add remaining sugar, melted butter, eggs, and salt.
  3. Mix in flour gradually until a soft dough forms.
  4. Knead 5–7 minutes until smooth and elastic.
  5. Place in a greased bowl, cover, and let rise 1 hour (or until doubled).

2. Make the filling

Mix softened butter, brown sugar, and cinnamon into a paste.

3. Roll & fill

  1. Roll dough into a 16×12 inch rectangle.
  2. Spread filling evenly.
  3. Roll tightly from the long side.
  4. Slice into 12 rolls.

4. Second rise

Place rolls in a greased baking dish.
Cover and rise 30–45 minutes until puffy.

5. Bake

  • Bake at 350°F (175°C) for 20–25 minutes, until lightly golden.

6. Frost

Beat frosting ingredients until creamy.
Spread over warm rolls so it melts in—the best part.


🍽️ Tips

  • For extra gooey rolls: pour ¼ cup warm heavy cream over the rolls before baking.
  • For overnight rolls: assemble, refrigerate, then rise 1 hour at room temp before baking.
  • Add-ins: chopped pecans, raisins, or a touch of orange zest in the dough.
