Ingredients (serves 6–8)

Casserole Base

  • 3 cups cooked chicken, shredded or diced
  • 2 cups cooked rice or pasta
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • 1 cup sour cream or Greek yogurt
  • 1 cup shredded cheddar cheese (or a mix of cheeses)
  • 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)

Crunchy Topping

  • 1 cup crushed crackers (Ritz or buttery crackers) or breadcrumbs
  • 2 tbsp butter, melted
  • ¼ cup grated Parmesan cheese (optional)

Instructions

1️⃣ Preheat Oven

  • Preheat oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish.

2️⃣ Prepare the Casserole Base

  1. In a large bowl, combine chicken, rice/pasta, cream soup, sour cream, cheese, vegetables, onion, garlic, salt, pepper, and paprika.
  2. Mix well until everything is evenly coated.
  3. Pour mixture into the prepared baking dish.

3️⃣ Make the Crunchy Topping

  1. In a small bowl, mix crushed crackers or breadcrumbs with melted butter and Parmesan (if using).
  2. Sprinkle evenly over the top of the casserole.

4️⃣ Bake

  • Bake 25–30 minutes until the topping is golden brown and casserole is bubbly.
  • Let cool 5 minutes before serving.
