🍍 Hawaiian Teriyaki Chicken (Island-Style)

Sweet, savory, caramelized chicken that tastes like it came from a Hawaiian BBQ plate lunch.

⭐ Ingredients

  • 2–2.5 lbs chicken thighs (boneless or bone-in)
  • 1 cup soy sauce
  • 1 cup pineapple juice
  • ½ cup brown sugar
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated (or 1 tsp ground)
  • 2 tbsp rice vinegar or apple cider vinegar
  • 1 tbsp sesame oil
  • 1–2 tbsp cornstarch + 2 tbsp water (optional, to thicken sauce)
  • Sesame seeds + sliced green onions for topping

⭐ Instructions

1. Make the Marinade

Whisk together:

  • Soy sauce
  • Pineapple juice
  • Brown sugar
  • Garlic
  • Ginger
  • Vinegar
  • Sesame oil

2. Marinate

  • Add chicken thighs to a bowl or zipper bag.
  • Pour marinade over the chicken.
  • Chill at least 2 hours, ideally overnight for true Hawaiian flavor.

3. Grill

  • Preheat grill to medium-high.
  • Grill chicken 5–7 minutes per side until charred and cooked through.
  • Brush with leftover marinade during last few minutes.

4. Optional: Make Teriyaki Glaze

  • Bring leftover marinade to a boil.
  • Add cornstarch slurry.
  • Simmer until thick and glossy.
  • Brush over finished chicken.

5. Serve

Traditionally served with:
🍍 Steamed rice
🍍 Macaroni salad
🍍 Grilled pineapple rings


🔥 Grilled Teriyaki Chicken (Classic, Sticky, Smoky)

⭐ Ingredients

  • 2 lbs chicken breasts or thighs
  • ½ cup soy sauce
  • ½ cup water
  • ⅓ cup brown sugar
  • 3 tbsp honey
  • 2 tbsp rice vinegar
  • 2 tbsp mirin (optional but amazing)
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp cornstarch + 2 tbsp water (for thickening)

⭐ Instructions

  1. Make Teriyaki Marinade: Combine soy sauce, water, brown sugar, honey, vinegar, mirin, garlic, and ginger.
  2. Marinate chicken for 1–6 hours.
  3. Grill over medium heat until charred and cooked through.
  4. Reduce leftover marinade in a saucepan with cornstarch until thick.
  5. Glaze chicken generously during the last few minutes of grilling.
