Here’s a classic, simple, and authentic recipe for Palacsinta—Hungarian-style thin pancakes similar to crêpes. They can be filled with jam, sweet cheese, Nutella, walnuts, or even savory fillings. Soft, delicate, and delicious!

Ingredients (makes 10–12 palacsinta)

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups milk
  • 1/4 cup sparkling water (optional, for lightness)
  • 1 tbsp oil or melted butter (plus extra for the pan)
  • 1 tbsp sugar (optional for sweet versions)
  • 1/2 tsp vanilla extract (optional)

Instructions

1. Make the Batter

  1. In a bowl, whisk together eggs, milk, sparkling water (if using), sugar, vanilla, and salt.
  2. Gradually whisk in the flour until smooth and lump-free.
  3. Mix in 1 tbsp oil or melted butter.
  4. Let the batter rest at least 15 minutes (optional but makes softer, easier-to-flip pancakes).

2. Cook the Palacsinta

  1. Heat a nonstick skillet over medium heat and lightly grease with oil or butter.
  2. Pour about 1/4 cup batter into the skillet and swirl to coat the pan in a thin layer.
  3. Cook 1–2 minutes until edges look dry and bottom is lightly golden.
  4. Flip and cook another 30–45 seconds.
  5. Repeat with remaining batter, greasing pan lightly as needed.

3. Fill and Roll

Fill warm palacsinta with any of the following and roll them up:

Traditional Sweet Fillings

  • Apricot jam (very classic)
  • Strawberry or raspberry jam
  • Sweetened cottage cheese or ricotta with lemon zest
  • Cocoa sugar (cocoa powder + sugar mixed)
  • Nutella
  • Ground walnuts mixed with sugar and a splash of milk
  • Cinnamon sugar

Savory Options

  • Cheese and ham
  • Sautéed mushrooms
  • Spinach and feta

  • Thinner batter = thinner palacsinta. Add more milk if needed.
  • For ultra-soft pancakes: Use sparkling water; it makes them delicate and airy.
  • Make ahead: Stack them with parchment between and refrigerate up to 3 days or freeze for later.
