Ingredients

Instructions

1. Preheat Oven

  • Preheat oven to 180°C / 350°F.
  • Grease and line a 9-inch (23 cm) round cake pan.

2. Make the Cake

  1. Beat egg yolks with ½ cup sugar until pale and creamy. Stir in vanilla extract.
  2. In a separate bowl, whip egg whites with salt until soft peaks form. Gradually add the remaining sugar and beat until stiff peaks form.
  3. Gently fold egg whites into the yolk mixture.
  4. Fold in ground walnuts and flour until just combined (do not overmix).
  5. Pour batter into prepared pan and bake 25–30 minutes, or until a toothpick comes out clean.
  6. Let the cake cool completely before slicing horizontally into 2 layers.

3. Make the Walnut Filling

  1. In a saucepan, combine milk and sugar, bring to a gentle simmer.
  2. Stir in ground walnuts and cook until thickened, stirring constantly.
  3. Remove from heat, add butter and vanilla, stir until smooth. Let it cool to spreadable consistency.

4. Assemble the Torte

  1. Spread half of the walnut filling on the bottom cake layer.
  2. Place the top cake layer on top and spread the remaining walnut filling over the top.
  3. Optional: Decorate with whipped cream or chopped walnuts.

5. Chill & Serve

  • Chill for 1–2 hours to let the flavors meld.
  • Slice carefully and enjoy!
