Here’s a moist and tender Blueberry Loaf Cake recipe—perfect for breakfast, brunch, or an afternoon snack.


🫐 Blueberry Loaf Cake

Ingredients (makes 1 loaf)

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or plain yogurt
  • 1 cup fresh or frozen blueberries
  • 1 tbsp all-purpose flour (for tossing blueberries)

Optional Glaze:

  • 1/2 cup powdered sugar
  • 1–2 tsp milk or lemon juice

Instructions

1. Preheat Oven

  1. Preheat oven to 350°F (175°C).
  2. Grease and line a 9×5-inch loaf pan with parchment paper.

2. Prepare Blueberries

  1. Toss blueberries with 1 tbsp flour to prevent them from sinking in the batter.

3. Make the Batter

  1. In a medium bowl, whisk together 1 1/2 cups flour, baking powder, baking soda, and salt.
  2. In a large bowl, cream butter and sugar until light and fluffy.
  3. Beat in eggs, one at a time, then add vanilla.
  4. Mix in sour cream until smooth.
  5. Gradually fold in dry ingredients until just combined.
  6. Gently fold in the blueberries.

4. Bake

  1. Pour batter into prepared loaf pan and smooth the top.
  2. Bake 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  3. Cool in pan 10 minutes, then transfer to a wire rack to cool completely.

5. Optional Glaze

  1. Mix powdered sugar with milk or lemon juice until smooth.
  2. Drizzle over cooled loaf for a sweet finish.

Tips & Variations

  • Frozen blueberries: Do not thaw; fold in directly from frozen to prevent color bleeding.
  • Lemon flavor: Add 1 tsp lemon zest to the batter for a bright flavor.
  • Nutty twist: Fold in 1/4 cup chopped pecans or walnuts for crunch.
  • Mini loaves or muffins: Divide batter into mini loaf pans or muffin tins; reduce baking time to 20–25 minutes for muffins.

This Blueberry Loaf Cake is moist, fruity, and lightly sweet, perfect for a cozy treat with coffee or tea.
