🍍 Hawaiian Grilled Teriyaki Chicken

Ingredients (serves 4)

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tbsp vegetable oil
  • Salt and pepper, to taste

For the Teriyaki Marinade:

  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup pineapple juice
  • 2 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp sesame oil
  • Optional: 1–2 tbsp honey for extra sweetness

Optional Garnish:

  • Pineapple slices, grilled
  • Chopped green onions
  • Toasted sesame seeds

Instructions

1. Make the Teriyaki Marinade

  1. In a bowl, whisk together soy sauce, brown sugar, pineapple juice, rice vinegar, garlic, ginger, sesame oil, and honey if using.

2. Marinate the Chicken

  1. Place chicken in a shallow dish or zip-top bag.
  2. Pour marinade over chicken, turning to coat.
  3. Marinate in the refrigerator for at least 1 hour, preferably 2–4 hours for maximum flavor.

3. Preheat Grill

  1. Preheat a grill to medium-high heat.
  2. Oil the grill grates lightly to prevent sticking.

4. Grill the Chicken

  1. Remove chicken from marinade, letting excess drip off. Reserve the marinade.
  2. Grill chicken 5–7 minutes per side (depending on thickness) until internal temperature reaches 165°F (74°C) and nicely charred.
  3. Optional: Brush reserved marinade on chicken during grilling for extra flavor, but don’t use raw marinade after cooking unless boiled first.

5. Serve

  • Serve chicken with grilled pineapple slices, steamed rice, or a fresh salad.
  • Garnish with chopped green onions and toasted sesame seeds.

Tips & Variations

  • Thicker sauce: Boil leftover marinade for 3–5 minutes to use as a glaze or dipping sauce.
  • Sweet & spicy: Add 1/2 tsp crushed red pepper flakes to the marinade for a mild kick.
  • Skewers: Cube chicken and thread onto skewers with pineapple and bell peppers for kabobs.
  • Oven option: Bake chicken at 400°F (200°C) for 20–25 minutes if you don’t have a grill.
