Smoked Sausage and Potato Bake

Ingredients (Serves 4–6)

  • 1 lb (450 g) smoked sausage, sliced into 1/2-inch pieces
  • 4–5 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 1 bell pepper, chopped (optional)
  • 2–3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika (optional)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon dried thyme or rosemary (optional)
  • 1 cup shredded cheese (cheddar or mozzarella, optional)
  • Fresh parsley for garnish

Instructions

Step 1: Preheat Oven

  • Preheat oven to 400°F (200°C).
  • Grease a 9×13-inch baking dish lightly with oil or cooking spray.

Step 2: Prepare Ingredients

  • Dice potatoes evenly so they cook at the same rate.
  • Slice smoked sausage, chop onion, bell pepper, and garlic.

Step 3: Toss Together

  • In a large bowl, combine:
    • Potatoes
    • Onion, bell pepper, garlic
    • Olive oil
    • Salt, pepper, paprika, thyme/rosemary
  • Toss until everything is evenly coated.

Step 4: Assemble in Baking Dish

  • Spread potato mixture in the prepared baking dish.
  • Scatter smoked sausage slices on top.

Step 5: Bake

  • Cover with foil and bake for 30 minutes.
  • Remove foil, stir gently, and bake for another 20–25 minutes, until potatoes are tender.

Step 6: Optional Cheese Finish

  • Sprinkle shredded cheese over the top in the last 5 minutes of baking.
  • Broil briefly (1–2 minutes) for a golden crust if desired.

Step 7: Serve

  • Garnish with fresh parsley.
