🥓 Fried Cabbage with Bacon and Onion

Ingredients (serves 4)

  • 1 medium head green cabbage, chopped or shredded
  • 4–5 slices bacon, diced
  • 1 medium onion, thinly sliced
  • 2–3 cloves garlic, minced (optional)
  • Salt and black pepper, to taste
  • 1/4 tsp crushed red pepper flakes (optional for heat)
  • 1–2 tbsp apple cider vinegar (optional, for tang)

Instructions

  1. Cook the bacon
    • In a large skillet or cast-iron pan over medium heat, cook diced bacon until crispy.
    • Remove bacon and set aside, leaving bacon fat in the pan.
  2. Sauté onion & garlic
    • Add sliced onion to the bacon fat and sauté 3–4 minutes until softened and slightly caramelized.
    • Add garlic and cook 30 seconds until fragrant.
  3. Cook the cabbage
    • Add chopped cabbage to the skillet. Toss to coat with bacon fat and onions.
    • Season with salt, pepper, and red pepper flakes if using.
    • Cook, stirring occasionally, for 10–15 minutes, until cabbage is tender and slightly browned at the edges.
  4. Add bacon & vinegar
    • Stir cooked bacon back into the cabbage.
    • Optional: drizzle 1–2 tbsp apple cider vinegar over the cabbage for a bright, tangy flavor.
  5. Serve
    • Serve hot as a side with fried chicken, pork chops, or any hearty main dish.

Tips & Variations

  • Greens variation: Substitute part of the cabbage with collard greens or kale for a different flavor.
  • Extra flavor: Add a splash of soy sauce or Worcestershire sauce for depth.
  • Vegetarian version: Skip bacon and use 2–3 tbsp olive oil or butter instead.
  • Caramelized touch: Cook cabbage longer on medium-low heat for deeper flavor and natural sweetness.
