Ingredients (serves 4)

  • 8 chicken drumsticks
  • 3 tbsp olive oil
  • 4 cloves garlic, minced

  • 2 tbsp soy sauce
  • 1 tsp smoked paprika (optional, for color & flavor)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional for heat)
  • 1 tbsp apple cider vinegar or lemon juice (optional, balances sweetness)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven
    • Preheat oven to 400°F (200°C).
    • Line a baking sheet with foil or parchment paper for easy cleanup.
  2. Prepare marinade
    • In a bowl, mix olive oil, minced garlic, brown sugar, soy sauce, paprika, salt, pepper, red pepper flakes, and vinegar/lemon juice.
  3. Coat drumsticks
    • Toss chicken drumsticks in the marinade until well coated.
    • Let sit for 10–15 minutes for quick flavor absorption (or refrigerate 1–2 hours for deeper flavor).
  4. Bake
    • Place drumsticks on the prepared baking sheet, spacing them apart.
    • Bake 35–40 minutes, turning halfway through, until chicken is cooked through (internal temp 165°F / 74°C) and skin is caramelized.
  5. Optional broil for extra crispiness
    • Broil for 1–2 minutes at the end to get a golden, sticky glaze—watch carefully to avoid burning.
  6. Serve
    • Garnish with fresh parsley and serve hot with rice, roasted vegetables, or a simple salad.

Tips & Variations

  • Extra sticky: Brush drumsticks with leftover marinade during the last 10 minutes of baking.
  • Spicy-sweet: Add 1–2 tsp sriracha or chili powder for a kick.
  • Grill version: Cook on medium-high grill for 20–25 minutes, turning occasionally, for a smoky flavor.
